So I tried to follow this recipe but had to change a couple of things. Things I change was instead of cream cheese I used grated smoked cheese and instead of the cheese balls he used I used Havarti herbs & spices cheese cut up into cubes. Most every thing else I just followed along with his recipe. I used my smoker with hickory pellets in the tube smoker @ 290F for 2.5 hours. Came out perfect. Going to freeze some for later and reheat in my air fryer. :P

Couple of questions about the bradley setup, is that wooden dowel just there to hand cabinet temp probe off?
Is the AMAZEN in a cold smoker box offset from the bradley?
