Rubbed down chicken, set cooker to 200° and let the chicken ride at that temp for 3.5 hours. Pulled and dunked in BBQ sauce that had been heavily diluted with apple juice. Returned to cooker and set temp to 375°. Let go about another 30-45 mins til done. It was YUM (it always is from my pellet muncher) :)

I see you are lovin' the new, multi-rack system of the new 2019 MAK 2 Stars! Very jealous and sad that my 2018 cannot be modified to that setup. This chicken cook looks fabulous and I'll bet a bunch of rib racks are coming soon...

Yes indeed! Over 1600 sq” on the new 2 Stars is crazy for such a small footprint :)
