Title: New Years Eve Prime Rib....I've had better
Post by: bamabob on January 01, 2020, 11:57:28 AM
Did a prime rib for NY Eve.  Kosher salt and in the fridge overnight, fresh ground pepper and granulated garlic the next day.  On the keg at 250* for 2-1/2 hours to IT of 225*.  Took out the diffuser and did a reverse sear.  This was a 4 pound Prime rib from Walmart.
Didn't have the good beef taste usually found with prime rib though it was tender.  Should have got one from Costco.

It looks excellent! In the past I didn't care for Walmart beef at all but they actually have pretty decent beef these days. It's a shame that prime rib didn't live up to expectations. I do agree Costco has very good beef, never been disappointed with my purchases there.

Happy New Year Bob! I hope you and Pat have a fantastic 2020 :)

Sure looks good.

I just recently stopped buying all red meat from Wal-Mart. It is low grade and just not good.

closest Costco for us is in Green Bay

I am getting all my red meat now from Kroger which at least here in Wisconsin is all Angus grade

What a difference.

Looks good from here. I also buy a lot of our meat now from either an online butcher shop or Sam's Club. Kroger has decent meat too which is a lot better than Walmart.

Really?

In general I wouldn't recommend any prime rib/rib steak/ribeye graded below USDA Choice. I'm still not sure what all those other buzzwords mean (Angus, Super Good, Rancher Deluxe, etc.) so I ignore them and only buy USDA-graded beef if I want a certain quality level.

The exception, of course, is beef from cattle Tee knew personally (don't ask) and recommends when sober. Those occasions are rare because of the emotional toll the memories take on our leader.

Jus' sayin'...

Mike, I always figured Wally World and Sam's got their meat from the same place since they are the same company.  Do you think that is not the case?

BTW, I usually get my meat, particularly beef, from our local grocer (Harris-Teeter).  I am usually very pleased with the result.

yea, 225 was a typo, should have been 125.

Actually the roast was a choice grade angus, in the crovac packaging.  I've had them before and the previous ones were really good.
It was the same as this one I had last year.

Thanks Jason, Happy New Year to you and Steph also.
Something about the beef from Costco is that it reminds me of the taste beef had when I was a kid.  Just don't get that "beefy" taste much these days.

This brings up a question for me. How can Costco provide superior beef year after year, and the other major players cannot?

Considering the beef industry is so consolidated with only a couple of huge players. Some of the differences may be subjective. Walmart as the largest grocery seller in the country by a wide margin should have the scale to demand the best. But who really knows.
I shop at various stores based on price and what looks good to my eye.
