Another try at Chick-fil-A copy
Used ground chicken for starters. Would not require the long
brining time for the pickel juice
Recipe...
1 lb Ground chicken
3 Tbs of pickle juice
3/4 Carb Quick flour (as a binder)
1 EGG
S&P to taste
Mix well and put in freezer for awhile (helps set up for forming)
Coating
2 cups Parmesean cheese
2 cups Low car bread ground into bread crumbs
2 Tbs Parsley
S&P to taste
Pat out into patties and coat with mix and out back in fridge for 30 mins
this helps the coating stay on
Pan fry till golden brown.

Was good but needs more marinade time. Did have the pickle taste I wanted but dang good either way. Doing it again but this time waiting hrs for marinade not mins
