Crash Hot Potatoes

Ingredients
12 whole New Potatoes (or Other Small Round Potatoes)
3 Tablespoons Olive Oil
Kosher Salt To Taste
Black Pepper To Taste
Rosemary (or Other Herbs Of Choice) To Taste

Bring a pot of salted water to a boil. Add in as many potatoes as you wish to make and cook them until they are fork-tender.
On a sheet pan, generously drizzle olive oil. Place tender potatoes on the cookie sheet leaving plenty of room between each potato.
With a potato masher, gently press down each potato until it slightly mashes, rotate the potato masher 90 degrees and mash again. Brush the tops of each crushed potato generously with more olive oil.
Sprinkle potatoes with kosher salt, fresh ground black pepper and fresh chopped rosemary (or chives or thyme or whatever herb you have available.)
Bake in a 450 degree oven for 20-25 minutes until golden brown.

I like the small red ones for this process. Nuking also works real well before ya smash them. I use a cup, but it all works. Enjoy. Pam .☆´¯`•.¸¸. ི♥ྀ.

LA, potatoes are great this way! I can never find a variaty of fingerling potatoes around here so I use the little red ones. The first time I made smashed potatoes it called for baking until soft, smashing, then brush on butter to finish. My daughter was home and when I took them from the oven to smash I told her and my wife we're having smashed potatoes and this is how you smash them, I had plenty. I threw one of the floor for a perfect smash. They both thought I had gone bonkers. I thought it was funny! Don

Maybe a little grated cheese and some chopped green onions on top towards the end of the baking.........

I like to nuke them until they are 3/4 the way done then mash em down with a can like that. Then coat with jalapeño salt, cheese, and candied bacon. Then finish in the oven broiler till the cheese is lightly brown. Then top with sour cream. Yumm!

Ok, that made my mouth water, even without pictures. Had a big brunch at friends today, wish I had some small taters to make this for a snack tonight.
