Tomorrow is National Moink ball day and I'm making moink balls with chorizo, chopped up bacon with chopped jalapenos stuffed with pepper cheese. Should be tasty.

I've never made them before. instead of frozen meatballs could I make my own meatball mixture? I do love meatloaf. i'm thinking meatloaf moink balls? better the next day on a bun....... ::)

homemade is best. Try cutting up a brick of cream cheese into 1/2" cubes or so. Then stuff the cubes into the ground pork/beef mixture then wrap em up with your choice of bacon. I use that roasted pineapple habanero sauce from costco to finish. 60% of the time, it works every time.

Ground smoky bacon and Italian sausage make a mighty good tasting meatball.....After the wrap of bacon, I dust them with rub, then when they come out of the smoker, I drizzle some of this on the moinks:

Meatball wrapped with a piece of bacon, like a belt. You Can buy frozen meatballs ( the small ones) and cut a strip of thin bacon in half across it's length, and use a toothpick to pin it to the meatball.
Then dust your favorite rub on it, and smoke 'em for a couple of hours at around 250F
