Title: Instant Gourmet, BBQ 3000, and Billy Bob's Que....oh my!

Started out with some Swift Premium St. Louis cut ribs from Costco...

Removed the silver skin and then one rack coated with Instant Gourmet Original...

The second one with Penzey's BBQ 3000...

And finally the last rack coated with Billy Bob's Que Pork Rib Rub...

After they were coated and tightly foiled they spent the night in the fridge to get happy. The next day it was into the Traeger. I set the PID to 220F, loaded the hopper with apple pellets, and this time I put the probe under the top rack instead of at lower grill level.

Then I loaded the smoke daddy with apple chips and ran it for the first hour...

I then pulled them out at the 2 1/2 hour mark because they were cooking a bit faster than expected. The lower level was probably more in the 250F range. They were then foiled with unsalted butter, honey, and dark brown sugar. Then they went back into the junior for 1 1/2 more hours at 220F rib side down.

After that I removed them and let them sit for 30 minutes in the foil to cool. After 30 minutes they were unveiled...

All were great. This was the first time I tried the Penzey's and was very impressed. It has a strong nutmeg flavor that goes really good with the ribs :)

Those are purdy ribs!!!!   All three rubs are excellent...did you have a favorite??

Loved them all! Instant Gourmet was the best but they were all very close ;)
