I made some more ground beef jerky sticks using my new LEM jerky gun. I used a 5lb mix of 80/20 chuck. Meat was seasoned with Backwoods regular jerky mix, some cayenne pepper for heat, and cure#1. Started the Bradley with convection fan on to 155F. Gave them 5 pucks of Applewood smoke. Slowly progressed to a finishing temp of 170F. Drying time was 6 hours ;D

Question, if using a NON modified bradley what would be the time?

Not sure Tommy...maybe 1/3 more time. You would also need to rotate the racks many times to get even drying also.

Muebe..what can you tell me about the Cure#1? Can I substitute with something else. Don't know of anyone here local that supplies this. Well, maybe TSC or something odd like that. We have a GFS & Sam's Club. Thanks.
I meant it about the baby brother thing..look how much help you were with my cold smoker..made me look real good.

Pam I just ordered some from Amazon. You don't need a lot so a $5 bag will last a long time. The Backwoods seasonings are very good and come with the cure also. I suppose you could use Morton Tender Quick but it would be way too salty. I would not skip the cure when using ground beef or you might get sick ;)

Shoot - Tommy you are the Modification Madman....next thing you know, I will be seeing posts of your Uber - Modded Bradley that is powered by a V-8, and the heat is from routing the exhaust thru the box! ;D ;D ;D

Muebe..good thought there..thanks... I saw it on amazon and am gonna order it. I have fresh venison to deal with, gonna kick it up a notch with fresh jalapenos, some cayenne and use my electric smoker. the weather is in the 40's so I think I'm not gonna try and cold smoke them. OK muebe you got me hooked and I have been looking around the net for jerky guns.
Can I use a regular pork/beef rub and cure and turn out with the same results? Thinking about GunPowder sticks in the Bradley what you think??

Tommy you can season it with whatever you want but just remember the flavor will intensify as they dry. Gunpowder is a real strong flavor so experiment with small batches until you get the measurement right.
I only use a little over half of the backwoods seasoning because using the correct amount gives too strong a flavor IMHO ;)

Tommy...Nesco make a nice jerky gun and they have the seasoning packs also. I have used them before, but like to add my own heat, usually cayenne and dehydrated jalapenos that I grow and dehydrate myself. Pammie ★*˚°。°
