I've seen several good looking stuffed chicken pics lately...thought I'd give it a try.
Found some zatarain's rice I hadn't tried that I thought may make a good base for the stuffing. Added some sausage and mushrooms and let it cook down.
Hammered my boneless skinless chicken thighs to an even thickness, then stuffed with rice and sausage mixture. It was harder than I thought but got the hang of it by the end. Smoked on low smoke for an hour and a half before cranking up the heat to 375 to crisp the bacon.
Julienned some zucchini, tossed with olive oil and Old Bay then grilled...love grilled veggies!
I was happy with the end result!
