Grilled Porter-Chops with wilted Red Romaine Lettuce & Candied Bacon

Had bought two Porterhouse steaks on sale. Grilled one last night and it was good! Well what to do with the other one?



I know! Start by cutting it into strips...



Then grab a center loin pork chop...



Cut it into a strip...



Now grab a strip of bacon...



Then roll them together like a Danish! Then another slice of bacon around the outside. then secure with a silicone cooking band...



Tim Tucker sent me some new rub he is developing called M-3. I gave them a liberal coating of it and some BP Little Louie's Garlic Seasoned Salt...



Got 3 of them done. First one was the prettiest. Now into the fridge for a rest...



The leftover pork, beef, and bacon...



Bacon chopped up and cooked...





Now mix the bacon with Texas Rib Candy...





Cut up the pork and beef with some cooking scissors...



Grill the pork and beef in a pan with some bacon grease...



Now mix the meat and bacon with more rib candy then into the fridge...



Back to the Porter-Chops. Preheated the Memphis with the flame zone installed. Then I grilled them for 6 minutes a side...



Flippy, Flippy...



Then removed them to pull the silicone bands off, topped with shredded Parmesan cheese, then up to the top rack...







Now for some Red Romaine Lettuce...



Dropped the lettuce on the grill for 20 seconds to get slightly wilted...



The Porter-Chops are looking about done now...



Plated with the wilted salad topped with shredded Parmesan Cheese, rib candied meat, and Marie's Chipotle Ranch Dressing...

Now these were fantastic! The salad and the Porter-Chop went great together. There was a great flavor with Tim's new rub. It was perfect ;)

That is one of the craziest things ever done to porterhouse. Carnivore chop. A+ for creativity Muebe!
