A Glut of Goat!

A friend roasted a whole goat a couple of years ago, very good! Much like lamb only leaner and tasted a little sweeter.

Goat is great and tasty  meat . just need long cooking .

Nothing like a good, slow cooked (in a pit--overnight) cabrito!   A tradition in our part of the country.    Don't get invited to as many celebrations as in former days, but they were wild.   Quite a process--almost ritual like to get the young goat cooked just right.   Then, lots of cabrito, pinto beans, usually cole slaw (or plenty of other salads) and even more cerveza!   That's beer for you gringos.   Then dancing and dancing to work it all off!
