Smoked Cornish Hens

Smoked a couple of 1 lb/2 oz Tyson All Natural Premium Cornish Hens at 225ºF for 4 hours until the IT reached 175ºF. Good eats!! Even though the skin looks delicious - it was rubbery after being smoked for 4 hours - but we don't eat the skin anymore so no big deal for us ...

Pulled my half of a Cornish Hen and was surprised at the ample amount of meat. More than enough for a meal ...
