I just posted to YouTube my recent cook of some delicious top sirloin steaks.

BLUF: Four steaks from Costco, a little sea salt and mesquite rub massaged in, then in fridge overnight. When it was time to put them on the grill to smoke at 225, I put a ThermoPro probe in the thickest steak, and set it to go off at 80 for the flip, then 120 to pull prior to searing (next time I'll probably up it to at least 125, but no one complained!
). After pulling at the target IT, reset the grill to 500. Once it was preheated, set steaks on the Grill Grates (that product is the bomb!) on the grates' flat side for about 2 min each side, then pulled to serve. At the end of the video is a view of the inside from an angle cut; rare with the nice sear crust and great color. Everyone enjoyed them.
