Nuts about Christmas

9 pounds worth.    ;D



The usual suspects..




Gonna take 2 trips through the Reveo.    1 bag of Pistachios to 1/2 bag of Almonds.



Our newest addition (Katy) is not impressed with the noise.




I think this is the best way to mix these things.   It really drives the flavors deep into the shells.



6.5 pounds on the MAK.




And the Traeger is stuffed to the gills.   I have 3.5 hours to figure out how I'm going to get them off of there.   ::)




Coffee and smoke, a perfect way to spend a chilly Saturday morning..




Gonna need some more Tabasco soon.  Sheesh.




I'm letting them roll at 200° for 4 hours.   Then into a steam table pan to finish drying in the house oven.

And we're done.  Sort of.   They never get completely dry in the Pellet cookers, so they'll spend some time in the house oven drying out.

MAK nuts at the 4 hour mark.




Traeger nuts at the 4.5 hour mark.  Still pretty tacky.    I don't have an expansion rack for the Traeger, so they were piled in there half an inch thick.




Into the house oven (on 'warm' - or whatever your lowest setting is) for the next few hours.

And we're ready to spread some Blazin' cheer..



Some in reserve for us.   ;)




Merry Christmas to the paper kid, our dueling mailmen, the trash guy who hauls off all the greasy/nasty/ash covered messes I put out every Sunday night (he's also getting a 12 pack of Bud to wash the nuts down  ;)), cleaning lady, etc. etc...

And here is the not-so-secret receipt.   ;D

Easy Peasy.. Adapted from Seemore's Blazin' Pistachios via the Bradley Smoker Forum.  (modified by my buddy KyNola for the Sam's sized bags of pistachios)

1 cup of green Tabasco sauce
1 cup of pickled jalapeno juice
5 tbsps of melted butter
1 1/2 tsps of salt or your favorite BBQ rub (I use a few heavy pinches of smoked salt)
5 tbsps of Worcestershire (roughly 1/3rd cup)
3 pound bag of pistachios

Mix well and smoke near 200° for a good 4 hours or so. Finish drying in the oven on low.

For these 4.5 pound mixed loads, I increased everything by around 30%.

Warning:  These are habit forming...

They are actually pretty mild.  My MIL eats them, and she thinks black pepper is the devil.   Just a nice even flavor to them, with a right amount of zip.   

Now, if you subbed Red Tabasco sauce, that would be a different story!
