For you folks that aren't on our
Facebook page (and we have to ask why not???) here are some photos from a test cook we did with the Jumbo Joe yesterday utilizing a new product we're working on called the Slow 'N Sear Basket. It's designed to fit 18" kettles and the Jumbo Joe (could also be used in bigger kettles). Because the 18" cookers made by Weber are so small we did not integrate the water reservoir into the basket. That would have taken up to much cooking space. Instead we have two plates that act as a radiant heat barrier between the heat and the meat. Here are photos of the cook:

The Weber drippings pan we're using as a water pan really shows off just how small this cooker is. We're using Stubb's charcoal and pecan chips for wood smoke. The meat is an Angus chuck roast weighing in at 3.68 pounds. We salted it the night prior then applied our version of Big Bad Beef Rub.

We refueled at the 3 hour mark (we were cooking hot (300 F) so charcoal was 2/3 gone at this time) and took a pic of the chuck roast. Internal temp was around 150 F.
Here the meat is at 175 F and we're wrapping with a little water added for moisture:
Once the meat hit 205 F we threw it in the Faux Cambro for two hours. Here it is out and ready to slice.
Money Shot! I'm not sure I could have done any better than this, on any of my cookers.
