For lunch today my wife wanted to make some gametime goodies. She used it as an opportunity to try out some of the Simply Marvelous rubs so she picked a couple to try, The Genie's Trinity and The Genie's Hooch. They came out nice, mine are the ones with BBQ sauce on them because, well.....that's how I roll
She also made some pulled pork potato skins and they were fantastic. Head Country BBQ sauce was mixed in with the pork, but just a little.
I woke up at 5:30 this morning because my body said it was 6:30 and I made up a brine consisting of kosher salt, apple juice, acv, brown sugar, red pepper flakes, honey, a little soy, a little olive oil, and some Spicy Apple Rub (Simply Marvelous). I put that into a zip lock bag with a pork tenderloin and let it hang out most of the day. After I brined it, I rinsed it off, coated with Dijon mustard and more Spicy Apple rub and wrapped in plastic wrap for a few hours until time to throw it on the Traeger. I made up some Fried Potato Salad to go along with the meal as well.
I took an apple and a peach and cubed them up small and added them to a pot with brown sugar, butter, cinnamon, a dash of rosemary, bourbon and Simply Marvelous Sweet Seduction rub. I let that simmer for a LONG time until it was nice and sticky and soft. Once the pork was done, I drizzled a little over the top of it and it was excellent! Served with some toasted baguette slices and roasted broccoli. It was a nice meal that let me try out some of those rubs. I like them a lot!
