Inaugural Pellet Cook - Fajitas

For my first-ever cook with pellets, I did fajitas.


Perfect day for a cook! This Memphis Elite is gorgeous.


Grocery was out of skirt steak, but had these nice looking tri-tip strips. A little Claude's Fajita Marinade for about an hour...


Onto the smoker at 225 degrees for an hour for some light smoke flavor. Hickory/Cherry/Maple blend. Man, this grill has some real estate!


Finished them off with the direct flame diffuser. This thing generates some awesome heat! Perfect medium-well results. These last two were for the "well-done" crowd.


The plate. A side of calabacitas and refritos.

Very pleased with the results. Steak had a bit of smoke flavor, very nice steakhouse char. I am sooo excited to start learning the ins and outs of this cooker! Can't wait to try some low and slow ribs next...

Looks great and the grill looks good also. You got a great deal there.
Why couldn't Noah have swatted the 2 mosquitoes?.

What temp did you have the ITC (controller) set at for the sear, and how long did it take to come up to that temp? Curious.

I followed the directions in the manual to turn the controller up to 700, close the lid and let it come up to temp, open the lid and push the up button one, two or three more times until the display reads O-1, O-2 or O-3 which is the highest setting. I did O-3. It came up to temp in about four or five minutes, not long at all. It was crazy hot, though. I'll try one of the lower settings next time!

I hear ya! My sister insists on her meats this way. She tells me if you cook me a burger and drop it on the floor and it breaks into pieces, that's how I like it.
