Sausage and Pancakes--low carb

Smoked some Swaggerty's sausage patties with some hickory.  Great way to fix sausage, tasty, moist and easy cleanup.  Had sausage and low carb pancakes for Sunday breakfast. 
Pancake is two eggs, 1 T cream cheese, 1 pack sweetener, cinnamon and salt to taste.  Blend in my smoothie maker and fry in butter.

That's what got me looking for an alternative TMB.  I really like these, just make sure to blend them until the cream cheese is all blended in and lots of air is introduced.  The skillet I use is the size of the pancake in the photo, I'd like to have one a little smaller so the pancake would be thicker.  I guess it would taste the same but the thicker appearance would look better.
