Pancake Breakfast Dinner

Felt like eating some pancakes so dinner tonight was pancakes and Jimmy Dean sausage patties.
If anyone wanted eggs they were optional but no wanted eggs except fr the wife.


 The last batch on the electric griddle.




I was a little hungry so I had a stack of five.

Oh man, that looks and sounds awesome. I love pancakes and sausage for supper. Glad you didn't have big egg orders. The cost here lately would break a guy. :o

Tell me about it.  I order racks of eggs for our commercial bakery and they have been up near 200% since last year!

I love pancakes and just wondered what recipe you use.  I have made some "from scratch" but never found a recipe I liked.  My best way I have found is to use the old Aunt Jemima mix and boycotted them for a while because of their name change, but had to buy the new name mix to get back what I liked.  I still would like to find an alternative.

These were made with Hungry Jack Light & Fluffy pancake mix. These were delicious. I too hae tried making them from scratch and they just don't come out like the bought mixes. Something I do like to do is add a teaspoon or two of baking powder to mixes. This helps to make them rise as they cook. Also adding about a tablespoon of vanilla, pure or extract gives them a little better flavor.

Last night we had bacon and Pain Perdu(French toast) and eggs were optional. I tink I only got one picture last night. I'll have to check.
