Left over NY Strip = Tasty Fajitas

Made a NY Strip last night on the Red and had some leftover steak. Wanted to make something that wouldn’t overcook the meat and still be a good meal, so I decided to go with Fajitas.

Pulled the steak and let it sit for about an hour to come to room temp, this will allow for a short time in the pan to get hot but not overcook.


Steak from last night at room temp and ready   


Fresh cut green peppers, red onions, and jalapenos


I sautéed some onions and peppers, and threw the steak in at the last minute just to heat it up. Don’t forget to spice to what you like


Plated and covered with some fresh jalapenos, cheese, fresh cilantro, lime, and a dab of sour cream.

They were good but only problem was that I didn't have enough leftover steak   :(

I could have gone for a couple more  :P

Those look outstanding, I like the foil tortilla heating method, never seen that before.

I've read this post a couple of times and there's still something that I can't quite figure out....leftover steak.  I don't know what that is, but it sure does make some fine looking fajitas.

Not something that typically happens in my house but I cooked for two and #2 canceled. Too bad, steak fajitas for me  :)

The next steak on my grill will be big enough for some leftovers ( hard to do at this house ).  Your cook has my juices going for fajitas.
