This is so obvious that y'all already know it but just in case there is someone who's been in a cave for a decade:
 The other night I fixed okra and tomatoes which has bacon in it and goes well over rice.  I had cooked some bacon slices in a frying pan and then rather than fixing the rice the "normal" way I toasted it in the frying pan after draining most of the bacon grease.  Then I cooked it in chicken broth.  Toasting the rice in bacon grease really gave it a great taste.  So, for the one person out there who hasn't done this, you may want to try it to kick your rice up a little bit.  Dee

Actually, I do use bacon grease for many things... just hadn't tried it on rice yet... I'm trying to catch up after all that time in the cave...  ;)

You can buy bacon, chicken or duck fat and they all make the best fried potatoes ever made. works great for rice too.  Pam .☆´¯`•.¸¸. ི♥ྀ

Toasting rice before cooking it adds a whole new dimension to the flavor, but doing it in bacon grease just had to be really good!

Some thing about the S.E.Texas thing that Capt Jack has added with the bacon grease- is a real memory tree shaker... man - it is an emotional experience to journey down that memory road. I will be in Texas the last week of July - and first week of Aug. and will be trying to  "fulfill some dreams"......
