Tuscan Chicken Cooked Under a Brick

Third meal on the CB TR-22D.
First I spatchcocked the yardbird. Next, I gave her a good rub with an Italian Salt Herb Rub. Into the fridge for 'bout 4 hrs. Started a potato packet a little before throwing the hen on. Used a small pan of apple shavings for a little more flavor. I wrapped a brick in foil, then threw the bird on skin-side down, and placed the brick on top. 15 min. later flipped the packet o'potatoes and the hen, placing ye olde brick back upon her. About 15 min. later all was done, just in time as the sky emptied with rain. (I'm seeing hot/cool zones on this grill, but I'm liking it.) We served a jalapeno-laced three bean salad with the chicken and potatoes.
Me Gusto Mucho! - I like it a lot!  Fabulous, the bird was crisp on the outside and as juicy as could be on the inside.
