I did some baby back ribs today.
Date on package was OK, no leaks, etc. they passed the "sniff test" - I just sniffed where I opened it.
Rubbed them up, did 3 hours @250F.
I noted that one rack was nearly falling apart, but the other 2 were as expected.
Foiled for an hour with Brown Sugar, white wine, honey, butter...
Upon slicing, the first rack was perfect, just a little tug.
The second rack, however, was un-slicable. literaly falling apart. Strange. Then I caught a wiff of "bad pork" - Seriously?
Ok - triage time - closely inspected, sniffed and tasted the first rack, all seems ok...
Took out the third rack, it was "a little tug" too.
Hmm... decisions, decisions....
We may regret it, but we ate the two racks, as we really did not feel like going out.
Anyone else ever experience this?
