Since it's summer there is an abundance of yellow squash available. One of the things we love at our house is squash cassarole.
Of the many variations and recipes I have ever had, the best came from a place in Smyrna, GA (which has been consumed by the cancer known as Atlanta) called Aunt Fanny's Cabin. At one time it was an old slave cabin and it closed down decades ago. Last night for supper I made this cassarole which was known as "Aunt Fanny's Bake Squash". It was perhaps the best I've ever eaten and thought y'all would like to try it.
3 pounds yellow squash sliced in 1/4'' or so slices
1/2 cup chopped onions (can add more if you want)
1/2 cup cracker meal of bread crumbs (I used panko)
1/2 tsp black pepper
1 tsp salt
2 eggs
1 stick of butter
1 T sugar
Wash and cut up squash. Boil until tender, drain, then mash.
Add 1/2 of butter and all other ingredients. Mix well
Pour squash mixture into baking dish
Melt remaining 1/2 stick of butter and spread over squash mixture.
Sprinkle top with cracker meal or bread crumbs.
Bake at 375* for about an hour or until brown on top.
