Smoked corned beef brisket

We could not find a brisket at the local market, so we decided to try our hand at smoked corned beef.  The plan was to use the meat for Reubens and for smoked corned beef hash browns - because I'm posting this after the fact, I can report that the sandwiches and hash were really good - as usual there is something special about the smoky flavor you can develop at home.

We soaked the corned beef in water to remove some of the salt - turns out that we might have soaked longer if we wanted to eat it plain, but on sandwiches and hash it was perfectly seasoned.

We toasted small bread rounds for the smoked salmon we plan to snack on while the meat cooks

Here's our snack - smoked salmon, cream cheese, onion, and capers. The drinks are sparkling wine pomegranate mimosas.

Almost done; we can almost taste those Reubens!

Here's a nice chunk we plan to use for smoked corned beef hash

I enjoy sharing our experiences, and reading/seeing the experiences of others.  Regional differences in food and cooking practices have always interested me, and I can never learn enough.

You had me at the mention of a smoked Reuben.  Then I saw the picture of the smoked salmon.  You are sure living the life out there!

I would have to defer to those with more knowledge than I have - funny thing is that the only reason I used corned beef is that it was the only beef at the meat counter that sounded tasty when smoked  ;D

Yup ... if you stumble across corned beef on sale after St. Paddy's day pick up a few and slow smoke it for some KILLER pastrami.

Well, I stumbled into this delicious treat, and I'll definitely stock up on some when it is on sale - my wife (me too) really likes the smoked corned beef in our hash browns, although it is not too bad on sandwiches either  :)
