Dinner Tonight - New Mexico Burrito

Took some pulled pork from the freezer and decided to make a pulled pork burrito, New Mexico style.

First thing was to warm up some Fiesta Beans while I microwaved the pulled pork. Then I warmed up a burrito size tortilla, and spread the pulled pork and the beans on the inside and slap on the top a good helping of chili con queso. Fold and wrap the tortilla. Then place on the top more chili con queso and top that with hot Hatch green chili sauce. For the final touch, put on top of that the traditional fried egg New Mexico style.

Here's what it looks like. And, it is plenty filling. I couldn't finish mine.

Oh man that does look good! Will have to save for when my wife goes to the lake - she won't eat beans, chilies, or runny eggs. These are some of my favorite things...  ;D So, this goes in the file for when she heads to the lake and I stay home. Thanks, Ed!

Man, that looks perfect; I'd eat one of those every weekend if my wife would let me.

Definitely the next time I do a breakfast burrito, a fried egg is going on top - thanks for the tip
