Spit on a turkey
« Reply #-1 on: March 03, 2012, 07:20:59 PM »
Nah, that's not right - I meant "turkey on a spit."  Anyway, I haven't cooked a turkey on a rotisserie in years and decided I should do one on the RED in the next few days.  Yes, I already know how well it cooks in TBE/SRG but thought I'd go for a slight change of pace.  Any special recipes, tips, tricks or advice?  Thanks.

How big?   That's got to be a helluva rotisserie if it will spin a whole turkey.

Looking forward to the results!

Oops - good point.  Thanks for the save/reality check, STC. The CRAFT kicked in and I forgot that you can't stuff 10 pounds of mud in a 5-pound sack (or, in this case, 15 pounds of turkey on a 10-pound rotisserie).

Plan B is now in effect - I'm still going to do it on the RED but stationary and either whole or spatched.  Or maybe halved with different treatments on each half.

Send your faves so I have someone to blame it on.

If you spatchcock the bird and split it, try some garlic infused EVOO injected into one half.  Also coat the outside with the same EVOO before you put your favorite rub on it.  I have done this several times with good results each time.

Ah, great minds move along the same lines.  I was gonna' say that, Art!  But why only 1/2?

I need to give credit where credit is due.  Hub is the one who got me started on injecting with garlic laced EVOO.  As far as only one half...  I was trying to leave the door open for "other" options.  One that I haven't tried yet is to inject some Bloor Orange infused EVOO.  I have a small turkey I intend to try that on one of these days.
