We are in fall softball season - my girls play and I coach - so dinners are "difficult." Tonight was a simple grilled chicken salad... the BF was over so we had to make some other meals to fill him up...
Just made a simple tossed salad - lettuce, celery, carrots, onions, green onions, mushrooms, tomatoes - whatever else is on hand... spray with lemon or lime juice to keep "fresh."
Used Mo Rockin Chicken as a rub on a dozen chicken thighs - can't beat Mo Rockin' Chicken!
Grilled the thighs on the Char Broil G2G - keeps them moist - perfect way to cook them!
When the thighs were done - pulled and let them rest - then sliced and added to the salad.
Nothing fancy - but it works! Very nice - all gone...
