New Year's Kraut is done!

I got a gallon of kraut fermenting on Dec. 3rd. it set for 24 days and was done so I put it in Mason jars and in the fridge to stop any further fermentation.  It tasted great I think the best I ever made; good and sour and not too salty. I got 3 ½ quarts from the batch. The two pint jars will be to give away. The half quart jar went in the fridge for eating now. I will use most of a quart for my New Year’s Day good luck pork and kraut.

You get the best health benefits from it raw, after cooking I think you lose most of that. For my pork and kraut I will use it un-rinsed, we like it sour and it flavors the pork nice.

Although it is almost a week away, I am already craving my New Years dinner (also pork and kraut).  You're not helping Don.  :D

The cabinet is 75 to 100 yrs. old made by a local furniture maker in Wapakoneta. Made with hand tools from 3/4 sawn oak, the labels on the drawers are original. It is one of my favorite pieces. Don

I have never made it Bavarian style, with caraway seeds and usually some wine and brown sugar. I like it that way but my wife prefers it sour. So now I say WE  ;D like it sour! I do like the sour it gives to the pork and the spaetzel or knopfles I usually add to it. Don

Don..I have to thank you for your guidance on making sauerkraut. I made a batch after getting that gallon jug thingi. Canned it after the gathering and just opened the first jar today. Absolutely perfect, just like grandma used to make. I fried up some pork with green peppers and onions and gahhlick and added the kraut and some caraway seeds..it's cooking in a crock pot as we speak. The perfect amount of sour, I didn't drain it, I like it that way. I will add the spaetzle later. I will be making rye bread this afternoon, just to soak up the juices.
