Getting ready for the Super Bowl party, I'm bringing the wings this year...
Tested 2 types today, looking for some heat, but also flavor and a good bite. Did Maryland style with some Chesapeake bay seasoning, and a Cajun style with creole seasoning.
Let's do this.
Season includes baking powder, place in fridge overnight....
Cajun..
Maryland...
Fired up the PBC, threw in two hunks of cherry wood...
25 minutes in, give them a flip...
Time to start the sauces...
Cajun is Krystal, butter, and dash of W-Shire, and heavy squirt od Sriracha.
Maryland is butter, Krystal, a large dose of Worcestershire, and some old bay seasoning...
45 minutes, pull the wings, sauce and eat.... Just a test run so none of the pretty stuff on top like parsley or chives...

Maryland...
Awesome flavor on both, a bit more heat on the Cajun, and a super crisp, awesome bite. The cherry smoke was a nice addition.
