Gracie's Pineapple Casserole

Gracie's Pineapple Casserole
Great as a side dish for 'Que or as a dessert

2 cans-15oz chunk pineapple, drained well (mix juice w/rum and enjoy!)
2 cups shredded cheddar cheese
6 TBS flour
3/4 cup sugar
12 Ritz crackers
2-3 TBS melted butter or margarine

Line a shallow casserole dish with the drained pineapple.

Mix together the cheese, flour and sugar; pour over the top of the pineapple (do not stir in).

Crumble the crackers over the cheese mixture and then sprinkle with the melted butter.

Bake at 350° for approximately 20-25 minutes

Pineapple Casserole is at the lower left

That's a great looking plate of food Rummm!!! I was thinking I never see many of your cooks here just answering butchering questions, and good too! I just checked out your posts and I must be missing them; you do do some nice cooks!!!  :o Don

Wonderful plate Rummm!  Looks tasty and thanks for the recipe, I love pineapple. I do the same with the pineapple juice, can't waste a good thing!
