After cleaning all the grills and smokers last weekend during the "good" weather (it was in the mid-40's but it's snowing again today)... it was time to use the Yoder YS 640 to smoke some vegetables for Wednesday's Kicked-Up Smoked Chicken Soup...
The players...
Quartered Yukon Gold potatoes, quartered yellow onion, roughly chopped celery, roughly chopped carrots, sliced green peppers, garlic cloves and large diced turnip in a disposable roasting pan.
Drizzled with olive oil (you don't need to use the good stuff), seasoned with smoked coarse kosher salt, smoked black pepper and a bit of chipotle chile flakes. Onto the Yoder for about an hour at 275 degrees F. with apple and sugar maple pellets.
The veggies will be cut into a medium dice before being added to the soup.
After smoke-roasting for about an hour... the potatoes and turnip still need a bit more time but making the soup will take care of that.
(The smoked garlic makes a great spread for a sliced baguette or crostini especially with sliced mozzarella and fresh basil.)
