First Memphis Rib Cook ;)

Started with four racks of St.Louis cut ribs...



The first rack rubbed with Billy Bob's Que Pork Rib Rub...



Next was rubbed with Fine Swine and Bovine rub...



Then I used Instant Gourmet Original rub...



And last was BBQ 3000 by Penzey's....



Memphis pre heated to 275F with Maple pellets...



Then onto the Memphis for 2 hours...



And after 2 hours...



I then pulled them to give each rack some foil love(thanks sparky)...



Two racks were coated with honey, brown sugar, and unsalted butter. Then foiled face down...



The other two were given a treatment of Bone Suckin' Sauce. Then foiled face down..



And then back on the Memphis for 1 1/2 more hours...



After the 1 1/2 hours of foil love I removed the foil and basted the racks with their juices. Then bumped up the temp to 375F and put back on unfoiled for 30 more minutes to finish them...



Now I will let the pictures finish the story. They are self explanatory ;)

They all tasted great. I ate two of each. The Suckin Sauce gave a nice flavor but a stiffer rib. The foil loved ribs were more tender. They were all rotated evenly so being on different racks was not the issue.

Tee your rub was excellent of course. And the instant was fantastic as usual. If you have not tried the Penzey's you should give it a try. It has a great flavor with a strong hint of nutmeg. And Southern Smoked(Mark) makes the Billy Bob's Que and it is great also.

The Instant Gourmet edges out ahead in this cook. But to be fair it did not get the treatment of Suckin Sauce and did get the foil love.

I love having the variety and will never just stick to one rub ;)
