Simple MAK Smoked Meatloaf

It's hard to beat smoked Meatloat!!.  Took my favorite meatloaf recipe which includes 1 lb of ground beef and 1 lb of pork sausage ... onions, eggs, bell pepper, bread crumbs, tomato sauce, and spices.  Smoked at 180ºF for 45 minutes and then bumped the temp to 375ºF until the IT reached 165ºF+.  Rested under a foil tent for 20 minutes.



Served with Mashed Cauliflower, brown gravy, and fresh picked daily (20 miles away in the Delta) steamed Asparagus   :)  Local vegie stands are selling fresh Asparagus 40¢ less than Costco right now.  The Costco Asparagus are coming from Mexico.

Great looking meatloaf and great idea on the mashed cauliflower with gravy.   ;)

I've wanted to try smoked meatloaf ever since I first read about it on the site, but have not convinced the wife that it is a good idea yet.  Might be able to do so with your excellent pics, especially the one with the smoke ring  ;)

Formerly I never liked meatloaf, but it was always too mushy for me, but my wife uses oatmeal instead of breadcrumbs, which for me gives it a nice texture.

I hope I can get her to do this
