Many of you may know this...but Way Out West - or Steak Savor ( Now re-labeled as Savor -All ) is fantastic on poultry.
You can:
Add it to your brine - mixes in great with a basic salt/sugar brine. For extra special flavor - throw in a couple of "bruised fresh rosemary stems, a few cracked juniper berries, and some mild white wine.
Make a compound butter by allowing 1 or 2 sticks of butter to come to room temp, and mix it in.... The refrigerate the butter - cube it up into small pieces - and place them at random under the skin of your bird, and in the cavity.
Add to olive oil, and add a little salt ( there is almost no salt in WOW or Savor-All) and rub it into the skin, and under the skin.
Add some to your favorite stuffing/dressing recipe.....
Thinking of some roasted root veggies? Toss them with a little olive oil/butter blend - then sprinkle on a little WOW or Savor-All and cook.
Remember that compound butter trick? Try some of it in baked, or mashed potatoes! Even on a sweet potato for a touch of savory flavor.
