Title: My [successful] attempt at pepper stout beef on the PBC!
Post by: brentwoodkris on March 08, 2015, 06:45:26 PM
I followed the popular recipe on the Wolfe Pit on how to do a pepper stout beef and the results were outstanding! I was able to do the whole cook on the PBC without the oven and everyone loved it! Pics below!

Dry brined with kosher salt and cracked black peppercorns for about 18 hours in the fridge:

Coals are a flaming (waiting for the standard 20 minute burn off period)

The 2.5# chuck roast has been hung! (along with 3 large chunks of hickory on the edges of the coal bed)

Veggies, beer, and sauce waiting for the meat to be done:

The roast hit 165F IT! (took 1hr 40 min):

The roast on its bed of veggies:

Shredded meat after it hit 210F IT (look at that smoke ring!):

Back in the cooker to burn off the excess liquid:

She got really smoky all of a sudden!
(http://i1357.photobucket.com/albums/q751/brentwoodkris/PBC/20150307_165140_zpsqboejtke.jpg) (http://s1357.photobucket.com/user/brentwoodkris/media/PBC/20150307_165140_zpsqboejtke.jpg.html)

And of course the mandatory EAT pic!

WOW! - I am going to try to make that.  :P :P

BUT, I am NOT going to try to compete with those pictures - mine will probably just include a picture of Rocky enjoying the sandwich!  ;) ;D ;D

Very nice all the way around!

Thanks guys! As you might have noticed in the first pic, I bought a two-pack of the roasts at Sam's club...So...ANOTHER one might be happening this week depending on how busy my nights are!

One of BBQ's great recipes done perfectly. Larry has some real creative recipes on his Wolfe pit site. Great Job. You can sub out the chuckie for a pork butt as well.....

Yup! I toasted them in the oven before serving, and man were they ON POINT! Another way my local Sam's Club has found into my wallet...fresh baked bakery goods like that...

excellent cook brother in law!!!! you like that lighter fluid method now huh...hahaha  looks like you have your pbc dialed in the way you want it.  what cook is up next?

hopefully i can do the same stout beef when your parents get here this weekend,  time permitting.  btw, instead of opening your wallet to sam's you need to be spending that money on your niece!!!!

Well I have a second roast chilling in the fridge that I should probably cook sooner rather than later, but the fiancee wants me to do some pulled chicken. She doesn't like bones, so I'm stuck with the boneless/skinless varieties. So I'm thinking about running to Sam's and getting a pack of boneless/skinless breasts. I'll be dry-brining them with the all-purpose rub overnight and then hanging them (individually on the hooks) until they hit 165-170IT. Then I'll run them inside and pull them apart with the meat claws and probably have a few cups of KC Masterpiece BBQ sauce in the crock-pot ready to bathe them in  :D .
