Title: Boneless butt hanging?

Our local grocery store rarely has bone in butts but the Costco always has the two pack of the boneless/butterflied ones. Did a search here and couldn't find anybody that's hooked a boneless one.

Any suggestions? Or just risk it and pull it at the 160 since it will still be firm enough to hold via the hooks?

I know I can just use the grate but I'm wanting to do 2 at once for an upcoming party and am looking for other's experience with boneless.

I think you'll be fine hooking it. As a comparison, I've hooked a large (and small) chuck roast for my pepper stout beef cooks, and I've never had even the slightest issue with it attempting to fall. If you're worried though, you could always just use more hooks to secure the meat (since we start with 8). You may have noticed that you can daisy-chain the hooks too for longer hooking configurations.

Like brent said hook a couple hooks together for reinforcement. I do that on ribs, brisket, and shoulder all the time. Haven't lost one yet
