Everything ended up fitting just fine.  I love this pbc, both meats, the veggies and tortillas turned out great.

And if your house has a balcony or high patio deck he has also been known to challenge anyone to a friendly game of "smoker tossing" :P

i came on here about to post a question about fajitas and saw your post, so perfect timing!!! im planning on beef fajitas for memorial day and curious how you cooked yours.  ive done chicken and that came out really well but haven't done beef yet.  i was planning on putting it on the grate but seeing you hang yours makes me think otherwise.  i was going to use skirt or flank steak.

1.  which cut of steak did you use?
2.  what temp did you take the beef out?
3.  how long did it take to finish your beef?
4.  did you use fajita seasoning?

thanks and great looking cook mpls!!!

Thanks, to answer your questions:

1. Flank steak from Costco
2. Pulled the meat around 135 (wife is pregnant and doesn't want it to bloody, and I still liked it a lot).
3. The roughly 1.75lb flank steak took about 30 min (this was w the veggies and chicken on there too).
4. Yes, I cheated and got it from the weber real grilling book - paprika, brown sugar, cumin, kosher salt, black pepper and chili powder.

I put the chicken on first for about 1hr 15 min and then added the steak and bowl of veggies.  The tortillas heat up in a min when the lid is closed and turn out perfect.
