Finally caught brisket on sale for 2.99 a pound. Picked up a 10 pound packer. Things I would definitely do different is trim off more of the fat and probably separate the point and the flat to get more seasoning on it. All and all it was pretty good but my only real complaint was it needed a little bit more bark before I wrapped it and I will definitely add more wood chunks. Looks like a good briskie to me. I don't wrap my briskets anymore. I do let em rest in parchment paper before carving.

Thanks. The chew was good it was firm and not chewy. The smoke came out more today. I used Black's BBQ seasoning

looks good!!!! i agree with you, i learned from doing packers that there is a spot where you can't season the top of flat and bottom of point where its connected. i don't do full packers anymore, ive purchased the packer, separate it, season, and then cook it. i have found that works better. costco does usda prime packers at 3.30/lb so for me the packer is way to go!!

Nice color. Looks good. And your price per pound is great, my local butcher and supermarket charge $9 a pound, though it is really good quality.
