I like making wings on the PBC but always thought it was a bit labor intensive having to tend to them during the cooking and sauces phases. When the PBC Co. introduced the hanging baskets the first application I thought of was WINGS! I added pictures as attachments as I couldn't figure out how to imbed them in this post.
I seasoned 2 packages of wings and loaded 6 in each basket. I could have put 2 more in each basket without overcrowding.
I let them smoke for about 80 minutes then brought them and tossed them in a bowl of sriracha seasoned BBQ sauce
I put the baskets side by side on cooking grate and turned the baskets 90 degrees every 15 minutes
This method worked for me!
