I am taking them chicken thighs cooked with 3 different rubs ( Chicken Savor, BBQ Savor, and Steak Savor which are versions of Mo-Rockin' Chicken, Fine Swine and Bovine and Way Out West ) and a rack of St. Louis style ribs made with BBQ Savor. Bacon with Bacon Savor - and....
1/2 of a pork loin that is injected with Steak Savor, then marinated in it. Then I sliced up an orange into very thin slices, placed those on top of it...and wrapped it all in bacon. Placed it in a snug fitting casserole - then into the pellet grill.....when it was finished - I took the approx. 1 cup of juices, and added about 2 cups of orange juice, the zest of an orange, 1 tbs butter, and about 2 shots of bourbon. Simmered until reduced to a "Karo Syrup" consistency. It looks like a caramel sauce, and smells/tastes like buttery bourbon oranges...
When I warm it up at the radio stain tomorrow - I will take some pictures and post 'em. So ...before you all bust my chops for the unicorn cook..gimme a break...I cooked for 10 hours today, and at one point had 3 grills going at the same time.
