I had a late afternoon craving for Ribs so ran to the store, got a short little rack of St Louis cut, just used salt and pepper and Sticky Fingers Sweet Southern Heat. 2.5 hours and came out pretty darn good!

Looking good ont the ribs. I think ribs on the PBC are the best.

I definitely have to say I've nailed my rib cooking procedure on the Pit Barrel. The last few cooks, taking all the same steps have given me perfect consistent results :)

yup I don't like fall off the bone where the meat shreds when you cut them. These have a nice pull from the bone yet tender :)
