I smoked a rainbow trout in a cedar board and it came out fantastic. What surprised me though was that it took about as long as a piece of salmon per the video.
Brushed the trout with a mixture of lemon juice, olive oil and Penzey's North Woods Rub.
I added a couple of Apple wood chunks to the basket. Not sure the cedar added much flavor. But the smoke was nice.
The onion, once you discarded the top layer, was so soft, sweet and smokey.

Trout looks delicious!!! I use cedar boards in my smoker for salmon and don't get any cedar taste but I think it helps keep the fish moist. Don

The onion didn't look appealing until cut and I took the photos outside before cutting.
