Hello all! I'm new to the site and this is my first official post. I am making not only my first PBC brisket this weekend but my first one ever (that wasn't a corned beef). I have a 10 pound packer brisket. I was looking for some PBC specific advice. From what I've read brisket can be tricky. So anyway glad to be here and thanks in advance for any tips you may have for me.

Welcome from the Philly Burbs. I have not done a brisket on the PBC but make sure you follow the video on their website about where to put the hooks. Don't want that baby falling into the coals!

I've done about 12 briskets in the past year on my PBC. I would say about 6 of them have been unbelievable, 3 were so so and 3 were too dry. I have replicated the same exact steps and have achieved different results. My best results have come after lying my brisket flat on the grate. Make sure your bark has formed before wrapping your brisket and don't get to hung up on the temperature of the brisket when you pull it off. When I poke my brisket with a thermometer I'm a lot happier when it feels like a toothpick going in and out of a cake rather then a 200 degree piece of dry meat. Glad to have you on here. Being a newbie myself I look forward to your sharing the results of your brisket. I recently got a PBC (today actually! ) so I applaud you going straight for the brisket! Good luck ;)

Thanks for all the tips and welcomes! I will definitely post pics as long as nothing disastrous happens. Haha. There is a chance of rain Sunday in NC. So I'll have to keep my fingers gers crossed that it holds back.
