Title: Some cornish hens
Post by: Aclarke44 on April 03, 2016, 10:36:10 PM
Did 5 cornish hens today.  Never cooked those before but they turned out great!  More flavorful than regular chicken.  Rubbed with Plowboys Yardbird. .....yum!

Alright, I can't take this anymore. We need to start our own community and all be neighbors! That way I don't have to look at pictures like these, I can see (an eat of course) the real deal :P

Looks great!
Did you know that these days a Cornish hen(which includes males as well as hens)is really for the most part just a very young chicken and is not a game bird at all. Mainly two or three breeds mixed with other breeds that are right at about one month old.

Thanks for all the comments guys!

Regular Guy, the skin didn't get as crispy as I wanted but that's because I was fighting a heavy wind all cook.  Wind usually keeps temps down and yesterday it did just that.  I struggled to get it over 320 when I was trying to ramp up the temp.  A few times I hit 330 but never did get the temp up to 350 like I usually do for crispy skin.  However it wasn't bad.  Some part of the skin got crispy and the others were at least edible.   I HATE rubbery chicken skin!
Now that I think of it, I may have been able to turn the intake into the wind to get the temp to rise.  I'll try that next time.  Usually though winds keep the temperature low in the PBC.

PS. I also like and use Plowboys Yardbird on all birds if they fly or not.
