And thanks to all that post here - I have tried several of the recipes posted in this topic and everything has come out great.
PS. Added 3 bolts to make a sear station down in my pit barrel cooker. Did a two bone prime rib - 2 hours smoking at 210 degrees over mesquite charcoal and some post oak chunks. Dropped it on the sear rack when it hit 115 degrees - pulled it at ~130 degrees. Best steak I have ever cooked (bottom right)
