Found some little grass-fed lamb chops at Safeway last night, and decided to try them in the cast iron.
Holy Moly, the crust on these was just to die for!! I wasn't feeling very creative, and since this was a totally last minute decision, I just turned the burner onto med-high, put in some coconut oil, and threw the chops on when it was hot. Sprinkled them with a little salt, seared for a few minutes on each side, then kept flipping them until the IT hit 135.

I think next time I'll plan ahead a bit, and smoke them for awhile and reverse sear them. The outer layer was a little too done by the time the inside was up to temp.
But boy oh boy was that a tasty dinner!! I And don't tell you know who, but I had a little bowl of snap peas on the side too. :)

I did sprinkle a few bites with some porcini mushroom powder mix which was a nice addition I might include next time I do these.

I like using the coconut oil for cooking, especially at higher heats, since it takes heat a lot better than a number of other other oils. There is a little different flavor to it compared to regular vegetable/canola oil, but it's not overwhelming, and I haven't found it unpleasant with anything I've used it in so far.
Haven't done any side by side experiments with different oils, but I still only have one cast iron pan, so I'll have to wait for my next birthday to do that! :)

Kat, I too use coconut oil. It's much healthier than most oils at high heat. And it does impart a light coconut taste but that's ok with me. I especially like eggs cooked in it. And if you don't like it's taste they do make an unflavored variety but it's kinda pricey at least in the brands I've seen.
