O.K. - I have a need for a new grill to feed mostly veterans when we have an open house at our office ( www.caresolutions.us ).
In saying the advantages of maximum cooking area - it looks like a flat top open gas grill may make sense...But, I can't help but wish for a more weather friendly solution with a top.
So, I am looking at this one: http://www.samsclub.com/sams/shop/product.jsp?productId=prod10840020
But would like any other ideas you guys and gals have. Maybe I can find a solution that allows some different fuel, or a way to enclose it in case of the weather turning bad....
Fire away with ideas. and, especially if you have some that help us with versatility of flavor..... ;)

Here is a charcoal option...

Our health department requires us to have a cover over any grills/smokers than open "up". (to protect from dive-bombing birds)

Take a peek at these....

Do you need easy portability? How many folks are you cooking for? What is the real goal of your cook? While my preference for most cooking is charcoal or wood, I have to say, when I am making a bunch of stuff for a bunch of people, I love my gas fired Blackstone griddle.

Build you a Rec- Tec trailer!

Build you a Rec- Tec trailer!
Or better yet, "borrow" the Rec-Tec trailer. They may just "loan" it to you for some publicity. It would cost you a trip to Augusta. Depending on when you need it, I might be up for another road trip.

I need this to be completely controlled "in-house"....Tho, I believe that Rec-Tec would be very supportive...It is as much about convenience as the other considerations.
Do you need easy portability? YES How many folks are you cooking for? Highly variable...could be a couple of hundred - or as few as 40 per event What is the real goal of your cook? Flavor, some speed, and weather contingencies. While my preference for most cooking is charcoal or wood, I have to say, when I am making a bunch of stuff for a bunch of people, I love my gas fired Blackstone griddle. And...the griddles serve the purpose of speed, and a lot of sq. in. to cook on. If I can find one that is affordable - with a top, it may have to be the choice...
Still, I am not a huge fan of gas/propane. I do use it when I have to - but I just prefer - in multiples - the taste of food cooked over wood or charcoal....
Keep 'em comin'! ;D

Ok , Have a receiver hitch mount made that holds two RecTecs side by side. Then have a secondary 3 point dolly made for portability on site and easy storage.
You can even add a set of Chrome Bull testicles for that "Cool Factor"!
Or
You could have a hood built for the griddle style unit.

Remember your clientele .
A gas grilled burger , brat or chicken may well be the tastiest thing they've eaten in years.
Although gas grills don't add a lot of flavor , seasoning &/or marinade will greatly enhance the taste.
I know someone who can help with procuring these ::)
You want the cook to be easy so you can delegate so you can schmooze the prospective clients.

I know that you;re asking for other ideas, but, I thought I'd let you know that what you've picked is a really good option.
A very good friend of mine (Hub knows him, too) has had one of these for years. He even got some heavy gauge sheet metal and made a couple of griddles for it. So, you can use it for grilled burgers & brats in the evening or bacon, eggs, and pancakes for breakfast.
He originally got it to take on his son's Cub Scout camping trips (he was the Camp Cook) so it's been drug around and looks just like it did the day he got it.
And, in the "for what it's worth" column, he paid $400 way back when.

I think for what you need it for gas is your best option.
Quick and convenience is what you need.
And large capacity in case you need it.
The one you picked seems to be a good choice IMHO.
And a harbor freight jumbo tarp should cover it when not in use.

Put some GrillGrates on that thing and you'll turn out some mighty tasty burgers ;D

I bet you could use your steel as a griddle.

Your killin' me! :D
And....thanks to all for your input. Sometimes it helps to get stuff like that out of your own head and discuss with others. I thought the Sam's deal was good....but wanted to see if I might be overlooking a better option.
Sam's flat top it is!
