Title: Sunday morning breakfast

Decided an "egg mc muffin" sounded good. Toasted and heavily buttered English muffin, four slices of homemade Canadian bacon (this ain't McD's) some smoked Cabot Seriously sharp white cheddar. Broken yolk fried egg with some smoked ghost pepper sea salt my brother gave me. That does look good.  I need to check my freezer.  I think I have some country ham that I could use in my version.

Works really good. I also have a metal one but the handle gets hot and the egg leaks under it. The silicone one works a treat. I spray just a dab of Pam on the inside so the egg wont stick when I lift it.

I'll give McD's credit for the inspiration but seriously doubt I will ever purchase another after making my own. I sometimes make them up ahead and wrap in a paper towel to take along fishing, hunting, whatever. 30 seconds in a microwave and nearly as good as right off the pan.
