Tom it looks great......but I am sad to say I have never heard of Beef on Wek & I grew up in New York LOL. Now you have me interested in trying it next time I am in the city. Thanks

About 4 years ago I was based in Buffalo NY for about 3 months that's where I had it for the first time. Have also had it in Florida also. thanks for watching :)

Looks great Tom, but never trimmed fat of one like that before.
I kept the fat on for flavor, but then again I smoked mine then seared all side for a nice crust.
Still though a great job!

Really like the glaze idea. We usually get bottom rounds and the "cheaper" cuts for the pressure cooker..........but now you got me thinking about firing up the pit :)

I had a client in Buffalo and was told to eat my beef on weck at Charlie The Butcher. And it is excellent!

Thanks for posting. I usually use that for jerky but that is a great looking roast beef. I lived in Buffalo for several years and now that I'm in FL finding kummelweck rolls is not easy so I made some of my own.

Thanks, my wife did her best to mimic the kümmelweck rolls, we have a place in The Villages Fl and two of the restaurants there serve Beef on Weck lots of retires from NY there. :)
